At Upper Bench Winery & Creamery we hand-craft several washed-rind cheeses. This beauty we call our Italian Gold is a stunner. With pale hay interior this semi-soft cheese has a firm supple, satiny texture with a bold tangy flavour. Our Italian version of Upper Bench’s Gold is flavoured with the aromatic flavours of an Italian kitchen with a blend of sun-dried tomatoes, onion and garlic.
We hand-craft all of our award winning cheese here at Upper Bench, using 100% Canadian pasteurized milk.
Our Upper Bench Italian Gold is made in ten inch rounds weighing in at a little over two kilograms, which we then slice into wedges.
Please note: We care about you receiving your cheese in the best possible condition, so we limit shipping days to Mondays, Tuesdays and Wednesdays.

Love garlic? Then this is the cheese for you! The Italian Gold is a variation of our Gold with a blend of sun-dried tomatoes, garlic and onion added in at the hooping stage. Big, beautiful and buttery is the only way to describe this creamy wash rind cheese. For this firmer cheese, we cut the curd a bit smaller and play with the curd until it has the consistency we are looking for to give the cheese its smooth texture. Flipped weekly to encourage even distribution of ‘eyes’ (holes) and washed with a brine solution to encourage bacterial growth, our Italian Gold is kept in a temperature and humidity controlled aging room until our cheesemakers approve them for sale.
