Folks have told us that our Upper Bench Gold washed rind cheese reminds them of an Oka from the days when it was made by the Monks. Big, beautiful and buttery is the only way to describe this creamy wash rind cheese. For this firmer cheese, we cut the curd a bit smaller and play with the curd until it has the consistency we are looking for to give the cheese its smooth texture. Flipped weekly to encourage even distribution of ‘eyes’ (holes) and washed with a brine solution to encourage bacterial growth, our Gold is kept in a temperature and humidity controlled aging room until our cheesemakers approve them for sale. Buttery, smooth, mild and creamy this semi-soft is a must have for those who love cheese for breakfast and works really well on a cheese board.
